Glycemic Index tells you how fast the carbohydrate in a food raises blood glucose, on a scale where pure glucose is 100. What it does not tell you is how much carbohydrate you are about to eat. That is the gap glycemic load closes.
Watermelon is the classic example. Its glycemic index is around 72, which sounds alarming. But a standard slice holds so little carbohydrate that its glycemic load lands near 4. The index is high; the actual effect on your blood sugar is small.
Available carbohydrate means total carbohydrate minus fibre, since fibre is not absorbed. The result is a single number describing the real glucose impact of the portion in front of you.
Across a whole day, a total glycemic load under roughly 100 is generally considered low and over 120 high, though the right target depends on your goals, your activity and any condition you are managing.
